Lemon and chocolate cups
Coppe al limone e cioccolato



Ingredients for 4 people:

For meringues:
3 eggs (only whites)
200 g circa powdered sugar
2 ts vanilla extract
For cream:
200 g cream cheese
200 g cream
2 tbs powdered sugar
For gelatin:
7 g gelatin powder
3 lemons
3 tbs (30 g) sugar
For chocolate sauce:
200 g chocolate
water

As this is a longer-than-usual recipe, let's start preparing some things beforehand. I suggest to make meringues the day before, so they'll be cool when you're going to make the dessert.

Separate eggs, keep yolks for another recipe.
Put in a bowl the whites and weigh them. Multiply for 2 and you'll have the amount of sugar you need (for me it was 200 grams). Don't mix it with whites right away, just keep it apart.

Line two baking sheets with parchment paper.

Grate 1 lemon, keep the zest aside and squeeze 3 lemons, you need to have 125 ml of juice.

And now let's start!

For meringues:
Take whites, add the vanilla extract and wisk until stiff, then add, sugar, one spoon at the time.
Take the prepared baking sheets and with a sac a poche form meringues.
Cook for 3 hours at 80°C but you may decrease the temperature if your meringues start to colour. If  dampness begins to form in the oven, leave the door a bit open, you can put a wooden spoon to block it.
Once your meringues are cold, crush them coarsely, putting them in a plastic bag and passing over a rolling pin.

For cream and sauce:
Melt chocolate with 3 or 4 tbs of water.
Take the lemon juice, put it in a pan and heat with gelatin and sugar. Boil for 1 minute. Add lemon zest.
With an electric whisk, beat together cream cheese, cream and sugar. When it gets thicker, add the lemon gelatin.

Now have fun making your cups: start putting 2 teaspoons of chocolate at the bottom, add some crushed meringues, then 2 spoons of cream.
Shake a bit to level, then repeat again and again and again.
End with chocolate and meringues.

Note: I know it may sound long, and in fact it's not a really quick recipe, well for the meringue part at least. In fact if you don't have time and buy already made meringues, these cups are really easy and quick.
And it's very easy to change flavour: substitute lemon juice with orange or raspberry, coffee ...



Ingredienti per 4 persone:

Per le meringhe:
3 uova (solo albumi)
200 g circa zucchero a velo
2 cucchaini estratto di vaniglia
Per la crema:
200 g formaggio spalmabile
200 g panna da montare
2 cucchiai zucchero a velo
Per la gelatina:
7 g gelatina in polvere
3 limoni
3 cucchiai (30 g) zucchero
Per la salsa al cioccolato:
200 g cioccolato
acqua

Siccome questa è una ricetta più lunga del solito, cominciamo preparando alcune cose in anticipo. Suggerisco di cucinare le merighe il giorno prima, così si saranno raffreddate per bene quando vorrete comporre il dessert.

Separate le uova, tenete i tuorli per un'altra ricetta.
Mettete gli albumi in una ciotola e pesateli. Moltiplicate per 2 ed otterrete l'ammontare dello zucchero che vi serve (Per me erano 200 grammi). Non aggiungetelo ora, mettetelo da parte.
Rivestite di carta forno due teglie.

Grattate 1 limone e mettete da parte, spremete 3 limoni, avrete bisogno di 125 ml di succo.

Ed ora cominciamo!

For le meringhe:
Prendete gli albumi, aggiungete l'estratto di vaniglia e montateli a neve ferma, poi aggiungete lo zucchero, un cucchiaio alla volta.
Prendete le teglie e con una sac a poche, formate le meringhe.
Cuocete in forno per 3 ore a 80°C ma potete diminuire la temperatura se le meringhe cominciano a scurirsi. Se si forma dell'umidità nel forno, lasciate la porta semichiusa, potete mettere un cucchiaio di legno per bloccarla.
Una volta fredde, sbriciolatele grossolanamente, mettendole in un sacchetto di plastica e passandoci sopra un mattarello.

Per la crema e la salsa:
Sciogliete il cioccolato con 3 o 4 cucchiai di acqua.
Prendete il succo di limone, mettetelo in un pentolino e scaldatelo assieme alla gelatina ed allo zucchero. Fate bollire per 1 minuto. Aggiungete la buccia del limone.
Con una frusta elettrica, montate assieme formaggio spalmabile, panna e zucchero. Quando comincia ad addensarsi, aggiungete la gelatina al limone.

E ora potete divertirvi a comporre le vostre coppe: cominciate con 2 cucchiaini di cioccolato sul fondo, aggiungete un po' di meringhe, poi 2 cucchiai di crema.
Livellate la crema, poi ripetete ancora e ancora e ancora.
Finite con cioccolato e meringhe.

Note: So che sembra lunga, ed infatti non è una ricetta veloce, bè almeno per la parte delle merighe. Infatti se non avete tempo e le comprate pronte, queste coppe sono molto facili e veloci.
Ed è anche molto facile cambiarne il sapore: sostituite il limone con l'arancia, con il caffè o con i lamponi.

Lemon herbed chicken
Pollo al limone con erbe


Ingredients for 2 people:
400 g chicken (I used breast)
1 tbs thyme
1 tbs estragon
1 tbs parsley
1 tbs oregano
1 tbs sesame seed
2/3 tbs evo oil
1 lemon
50 g cream cheese
50 g cream
1 ts mustard powder

Cut the chicken in small pieces.
In a plate mix herbs and sesame. Add the chicken and press well the mix on the meat.
Heat oil in a pan, add sliced lemon, season with salt and pepper and cook for 5 minutes.
Add chicken and cook for 15 minutes or until the meat is well done.
Discard lemon and serve with a sauce made by beating together cream, cream cheese and mustard.

Note:
For this recipe I used dried herbs.

Tip:
Try serving this dish with some balsamic vinegar dressing.


Ingredienti per 2 persone:
400 g pollo (ho usato il petto)
1 cucchiaio timo
1 cucchiaio dragoncello
1 cucchiaio prezzemolo
1 cucchiaio origano
1 cucchiaio sesamo
2/3 cucchiai olio extravergine d'oliva
1 limone
50 g formaggio spalmabile
50 g panna
1 cucchiaino senape in polvere

Tagliate la carne a piccoli pezzi.
In un piatto mischiate le erbe ed il sesamo. Aggiungete il pollo e premete bene le erbe sulla carne.
Scaldate l'olio in una padella, aggiungete il limone tagliato a fette, salate e pepate e fate cucinare per 5 minuti.
Aggiungete il pollo. Cucinate per 15 minuti circa o fino a quando la carne sarà ben cotta.
Eliminate il limone e servitelo con una salsa ottenuta lavorando assieme il formaggio, la panna e la senape.

Nota:
Per questa ricetta ho utilizzato erbe aromatiche secche.

Consiglio:
Provate a servire questo piatto con della crema di aceto balsamico.

Lemon saffron soft cake . Torta soffice al limone e zafferano






Ingredients for 1 cake:

3 eggs
150 g cream cheese
1 packet saffron (0.15 g)
2 lemons
170 g sugar
180 g flour
7 g baking powder
salt


Preaheat oven at 170°C.

Separate eggs. Add a pinch of salt in whites.
In another bowl add yolks, cream cheese, saffron, zest of 1 lemon and juice of both.
Mix well. Add flour and baking powder.
Beat whites until they form peaks and incorporate them in the mixture.
Pour in a greased or lined baking tin.
Bake for 40 minutes, or until a skewer inserted in the middle, comes out clean.

You'll end up with a very moist cake, that keeps well for several days.







Ingredienti per 1 torta:

3 uova
150 g formaggio spalmabile
1 bustina zafferano (0.15 g)
2 limoni
170 g zucchero
180 g farina
7 g lievito per torte (circa mezza bustina)

Riscaldate il forno a 170°C.
Separate le uova ed aggiungete un pizzico di sale negli albumi.
In un'altra ciotola mettete i tuorli, il formaggio, lo zafferano, la buccia grattuggiata di un limone ed il succo di entrambi.
Mescolate bene. Aggiungete farina e lievito.
Montate a neve gli albumi ed incorporateli al composto.
Versate in uno stampo imburrato o rivestito di carta forno.
Cuocete per 40 minuti, o fino a quando lo stuzzicadenti inserito al centro della torta, esce pulito.

Il risultato sarà una torta molto umida, che si conserva bene per diversi giorni.

Creamy lemony pasta . Pasta cremosa al limone



So, here we are with our new ingredients. If you follow me on Facebook or on Twitter, you already know, but in case you missed them, this month we're going to cook with lemons and cream cheese.

Eccoci qui con i nostri nuovi ingredienti. Se mi seguite su Facebook or on Twitter, li conoscete già, ma in caso ve li siate persi, questo mese cucineremo con limoni e formaggio spalmabile!


Ingredients for 2 people:
your favourite pasta*
1 lemon (only peel)
2 spoons cream cheese

Peel half lemon, put the peel in a pan together with some water and bring to boil. Add salt.
Drop your pasta and cook for the minutes indicated on package.
Before draining, keep half a glass of water, discard the peel, then drain and put tha pasta back in the pan.
Add the cream cheese and enough water to have a creamy pasta.
Transfer in a dish, and before serving, grate the second half of your lemon on your pasta.

* Notes:
I didn't mention quantity because I see it depends very much if you are a man, a woman or an hungry teenager, so use your usual quantity.
I used tagliatelle, because they are my favourite kind of pasta, but you can make it with every kind of pasta.
You will end up with a peeled lemon, next week we're going to use the juice!



Ingredienti per 2 persone:
il vostro tipo di pasta preferito*
1 limone (solo la buccia)
2 cucchiai di formaggio spalmabile

Pelate metà limone, mettete la buccia in una casseruola aggiungeteci l'acqua e portate a bollore. Salate.
Versateci la pasta, e cucinate secondo i minuti indicati.
Prima di scolarla, conservate metà bicchiere d'acqua, eliminate le bucce, poi scolate la pasta e rimettetela nella casseruola.
Aggiungetevi il formaggio spalmabile ed abbastanza acqua da renderla cremosa.
Trasferite nel piatto e, prima di servire, grattate l'altra metà della buccia di limone sulla pasta.

*Note:
Non ho indicato la quantità perchè è molto variabile, se siete un uomo, una donna o un teenager affamato, quindi utilizzate la vostra solita quantità.
Ho utilizzato le tagliatelle, perchè è il tipo di pasta che mi piace di più, ma potete farlo con qualsiasi tipo di pasta.
Alla fine vi ritroverete con un limone pelato, prossima settimana utilizzeremo il succo!
