Lemon and chocolate cups
Coppe al limone e cioccolato



Ingredients for 4 people:

For meringues:
3 eggs (only whites)
200 g circa powdered sugar
2 ts vanilla extract
For cream:
200 g cream cheese
200 g cream
2 tbs powdered sugar
For gelatin:
7 g gelatin powder
3 lemons
3 tbs (30 g) sugar
For chocolate sauce:
200 g chocolate
water

As this is a longer-than-usual recipe, let's start preparing some things beforehand. I suggest to make meringues the day before, so they'll be cool when you're going to make the dessert.

Separate eggs, keep yolks for another recipe.
Put in a bowl the whites and weigh them. Multiply for 2 and you'll have the amount of sugar you need (for me it was 200 grams). Don't mix it with whites right away, just keep it apart.

Line two baking sheets with parchment paper.

Grate 1 lemon, keep the zest aside and squeeze 3 lemons, you need to have 125 ml of juice.

And now let's start!

For meringues:
Take whites, add the vanilla extract and wisk until stiff, then add, sugar, one spoon at the time.
Take the prepared baking sheets and with a sac a poche form meringues.
Cook for 3 hours at 80°C but you may decrease the temperature if your meringues start to colour. If  dampness begins to form in the oven, leave the door a bit open, you can put a wooden spoon to block it.
Once your meringues are cold, crush them coarsely, putting them in a plastic bag and passing over a rolling pin.

For cream and sauce:
Melt chocolate with 3 or 4 tbs of water.
Take the lemon juice, put it in a pan and heat with gelatin and sugar. Boil for 1 minute. Add lemon zest.
With an electric whisk, beat together cream cheese, cream and sugar. When it gets thicker, add the lemon gelatin.

Now have fun making your cups: start putting 2 teaspoons of chocolate at the bottom, add some crushed meringues, then 2 spoons of cream.
Shake a bit to level, then repeat again and again and again.
End with chocolate and meringues.

Note: I know it may sound long, and in fact it's not a really quick recipe, well for the meringue part at least. In fact if you don't have time and buy already made meringues, these cups are really easy and quick.
And it's very easy to change flavour: substitute lemon juice with orange or raspberry, coffee ...

Per le meringhe:
3 uova (solo albumi)
200 g circa zucchero a velo
2 cucchaini estratto di vaniglia
Per la crema:
200 g formaggio spalmabile
200 g panna da montare
2 cucchiai zucchero a velo
Per la gelatina:
7 g gelatina in polvere
3 limoni
3 cucchiai (30 g) zucchero
Per la salsa al cioccolato:
200 g cioccolato
acqua

Siccome questa è una ricetta più lunga del solito, cominciamo preparando alcune cose in anticipo. Suggerisco di cucinare le merighe il giorno prima, così si saranno raffreddate per bene quando vorrete comporre il dessert.

Separate le uova, tenete i tuorli per un'altra ricetta.
Mettete gli albumi in una ciotola e pesateli. Moltiplicate per 2 ed otterrete l'ammontare dello zucchero che vi serve (Per me erano 200 grammi). Non aggiungetelo ora, mettetelo da parte.
Rivestite di carta forno due teglie.

Grattate 1 limone e mettete da parte, spremete 3 limoni, avrete bisogno di 125 ml di succo.

Ed ora cominciamo!

For le meringhe:
Prendete gli albumi, aggiungete l'estratto di vaniglia e montateli a neve ferma, poi aggiungete lo zucchero, un cucchiaio alla volta.
Prendete le teglie e con una sac a poche, formate le meringhe.
Cuocete in forno per 3 ore a 80°C ma potete diminuire la temperatura se le meringhe cominciano a scurirsi. Se si forma dell'umidità nel forno, lasciate la porta semichiusa, potete mettere un cucchiaio di legno per bloccarla.
Una volta fredde, sbriciolatele grossolanamente, mettendole in un sacchetto di plastica e passandoci sopra un mattarello.

Per la crema e la salsa:
Sciogliete il cioccolato con 3 o 4 cucchiai di acqua.
Prendete il succo di limone, mettetelo in un pentolino e scaldatelo assieme alla gelatina ed allo zucchero. Fate bollire per 1 minuto. Aggiungete la buccia del limone.
Con una frusta elettrica, montate assieme formaggio spalmabile, panna e zucchero. Quando comincia ad addensarsi, aggiungete la gelatina al limone.

E ora potete divertirvi a comporre le vostre coppe: cominciate con 2 cucchiaini di cioccolato sul fondo, aggiungete un po' di meringhe, poi 2 cucchiai di crema.
Livellate la crema, poi ripetete ancora e ancora e ancora.
Finite con cioccolato e meringhe.

Note: So che sembra lunga, ed infatti non è una ricetta veloce, bè almeno per la parte delle merighe. Infatti se non avete tempo e le comprate pronte, queste coppe sono molto facili e veloci.
Ed è anche molto facile cambiarne il sapore: sostituite il limone con l'arancia, con il caffè o con i lamponi.
