Recipes I love: Irish whisky cake



This recipe is from Cakes and loaves: 110 recipes you can make at home by Ilona Chovancova, I made it several times and it's really really really good. This time I decided to make (16) muffins from this recipe and iced them.

Irish Whisky Cake
Recipe by Ilona Chovancova

1 1/2 cup (180 g) flour
3 eggs
1 cup (170 g) sugar
2/3 cup (150 g) butter
3 1/2 oz (100 g) dark chocolate
2 tbs cocoa powder
1/4 cup (60 ml) whisky cream
2 tbs + 2 ts (40 ml) whisky
1/2 packet baking powder
1/2 ts baking soda (optional)
1 pinch salt


Heat oven at 350°F (180°C).

Melt butter and chocolate, cut in small pieces, in microwave.

Grease and flour mould.

In a bowl, whisk eggs with sugar until they double their volume and they've become foamy. Add flour one spoonful at time, then cocoa, melted chocolate and butter, salt, whisky cream and whisky.

Gently baking powder and baking soda (if using). Pour in the prepared mould and bake for 40 minutes.

Let cool before unmolding the cake.



Questa ricetta è tratta dal libro Cakes dolci e salati di Ilona Chovancova (e tradotto da una certa Sigrid Verbert), trovate un estratto del libro qui, questa ricetta è davvero davvero davvero buona. Questa volta ho deciso di ricavarne dei muffin (16 per la precisione) e di coprirli con una semplice glassa.

Cake Irish Whisky
Ricetta di Ilona Chovancova

180 g farina
3 uova
170 g zucchero
150 g burro
100 g cioccolato fondente
2 cucchiai cacao amaro in polvere
60 ml crema di whisky
40 ml whisky
1/2 bustina lievito per dolci
1/2 cucchiaino bicarbonato (facoltativo)
1 pizzico di sale


Scaldate il forno a 180°C.

Sciogliete nel microonde il burro con cioccolato tagliato a pezzetti.

Imburrate ed infarinate uno stampo.

In una ciotola sbattete le uova con lo zucchero fino a quando  il composto avrà raddoppiato il volume e risulterà spumoso. Poi aggiungete a poco a poco la farina, il cacao, il composto di burro e cioccolato, il sale, la crema di whisky ed il whisky. 

Incorporate delicatamente il lievito ed il bicarbonato. Versate  l'impasto nello stampo ed infornate.

Fate cuocere 40 minuti. Lasciate raffreddare prima di sformare.

Spring Prosecco cocktail


I love Prosecco, being by itself or in a Spritz Aperol it's always the perfect aperitivo for me, so I came up with this spring aperitivo with fruits and hibiscus syrup. 


Spring Prosecco Cocktail

Ingredients for 4 people:
1/3 cup (80 ml) hibiscus syrup (I followed Sweet Paul's recipe)
1/2 cup (80 g) raspberries
3 strawberries
1 orange
1/2 lime
600 ml (3/4 bottle) Prosecco
200 ml (1 glass) sparkling water
2 tbs (30 ml) Apricot Brandy (optional)

Wash and pat dry raspberries e strawberries. Slice strawberries.
Wash and cut in wedges lime.
Cut orange in half, cut in wedges the first half, then squeeze the other one.
Pour in a jug the syrup, add fruit and orange juice, water, 1 glass (200 ml) Prosecco and apricot brandy (if using).
Blend well, cover with lid (or cling film) and put in fridge overnight.
The day after, just before serving, add the remaining Prosecco and cheers!

Aperitivo is served!

Adoro il Prosecco, che sia da solo o in un Aperol Spritz è  sempre un aperitivo perfetto per me, quindi ho creato questo aperitivo primaverile con frutta e sciroppo di ibisco.


Spring Prosecco Cocktail

Ingredienti per 4 persone:
80 ml sciroppo di ibisco (ho seguito questa ricetta di Sweet Paul)
80 g lamponi
3 fragole
1 arancia
1/2 lime
600 ml Prosecco
200 ml acqua frizzante
30 ml Apricot Brandy (opzionale)

Lavate ed asciugate i lamponi e le fragole. Tagliate a fette le fragole.
Lavate e tagliate a spicchi il mezzo lime.
Tagliate l'arancia a metà, tagliatene a spicchi una metà e spremete l'altra metà.
Mettete in una caraffa lo sciroppo, aggiungete la frutta ed il succo d'arancia, l'acqua, 200 ml di Prosecco e l'apricot brandy (se lo usate).
Mescolate bene, coprite con il coperchio (o con la pellicola) e mettete in frigo per una notte.
Il giorno dopo, appena prima di servire, aggiungete il rimanente Prosecco e cin cin!

Puff pastry pinwheels
Girandole di pasta sfoglia


I love making these pinwheels: they're quick to prepare and versatile.
You can change the filling according to what you have in your pantry, you just need puff pastry and a spreadable cheese as base (I used ricotta but you can substitute it with robiola or cream cheese). 
Plus, using the muffin tray to bake them helps having perfect round pinwheels.

Puff pastry pinwheels

Ingredients for 10 pieces:
Base
1 rectangular puff pastry roll
250 g ricotta (or cream cheese)
Filling
2 tbs black olives tapenade
6 whole (or 12 halves) semi-dried tomatoes in oil (I used these)
2 whole (or 8 quarts) preserved artichokes

Pat dry tomatoes and artichokes.

Cut artichokes thinly (I obtained 16 thin slices), cut tomatoes in half (if you use whole ones).

Unroll pastry, spread first cheese, then tapenade. Place tomatoes and artichokes on top.

With the help of the wrapping paper, roll as tight as you can, then put in fridge for 10 minutes.

Turn oven on at 350°F/180°C, take roll from fridge and cut it in 10 even slices.

Now it's time to grab your muffin case: put each slice in a hole (no need to grease) and bake for 30 minutes.

Mi piace un sacco fare queste sfogliatine: sono molto veloci da prepare e versatili.
Potete cambiare il ripieno con quello che avete in dispensa, avete bisogno solamente della pasta sfoglia e di un formaggio che sia facilmente spalmabile, io ho usato la ricotta ma potete usare anche la robiola o il famoso formaggio spalmabile in vaschetta.
In più, usare la teglia da muffin per cuocerle aiuta ad ottenere delle girandole perfettamente rotonde.

Girandole di pasta sfoglia

Ingredienti per 10 pezzi:
Base
1 rotolo rettangolare di pasta sfoglia
250 g ricotta
Ripieno
2 cucchiai patè di olive nere
6 pomodori semi-secchi sott'olio (Io ho usato questi)
2 carciofini interi (o 8 quarti) sott'olio

Asciugate i pomodori e i carciofini tamponandoli con della carta casa.

Tagliate i carciofini in fette sottili, in modo da ricavarne 16 circa, tagliate i pomodori a metà (se usate quelli interi).

Srotolate la pasta, spalmatevi il formaggio, poi distribuite pomodori e carciofi.

Con l'aiuto della carta nella quale è avvolta la pasta sfoglia, arrotolate il più stretto possibile, poi mettete in frigo per 10 minuti.

Accendete il forno a 180°C, estraete il rotolo dal frigo e tagliate in 10 fette uguali.

Ora è il momento di estrarre la teglia da muffin: metteteci una fetta in ogni posto (non c'è bisogno di ungere) e cucinate in forno per mezz'ora.
