Baked pasta with pumpkin meatballs
Pasta al forno con polpettine alla zucca


Ah ... meatballs! I love them, I don't make them very often to limit myself not to eat so much meat, but now it's time for pumpkin meatballs!
I already posted a recipe for pumpkin meatball last year, see here. I changed a bit the recipe and this time I baked them. Here there are ingredients for 40 meatballs, you won't use them all (well, you could, of course), so use as much of them as you like, you can freeze the rest of them (as I did!).

Ingredients for 4 people:

200 g (7 oz) short pasta
3-4 tbs grated cheese (parmesan)
nutmeg
evo oil

For 40 meatballs:
350 g (12 oz) mixed minced meat
100 g (4 oz) mortadella
200 g (7 oz) pumpkin puree (steamed pumpkin)
1 egg
4 tbs breadcrumbs

For pumpkin bechamel:
50 g (2 oz) butter
50 g (2 oz) flour
200 g (7 oz) pumpkin puree (steamed pumpkin)
500 ml (2 cups) milk

Prepare meatballs: turn oven on at 180°C (350°F), line an oven dish with parchment paper, put all the ingredients in a food processor, prepare meatballs and bake them for 10 minutes, turn them upside down and cook for other 5 minutes.

Boil pasta in salted water for a couple of minutes less than the prescribed time on package. Drain and pour in a large bowl, add oil and mix well, to avoid pasta to get "glued" together.

Prepare bechamel: heat milk. Melt butter in a saucepan, add flour and cook for a few minutes. Add pumpkin and then milk, all at once. Keep on stirring with a whisk until it thickens (few minutes) and then season with salt and a pinch of nutmeg. 

Add bechamel to pasta and mix well.

Brush with oil an oven dish, pour pasta in it, place meatballs on pasta, sinking them a bit in it and dust with grated cheese. Bake for 15 minutes at 180°C (350°F).


Ah ... polpette! Le adoro, ma non le faccio spesso, più che altro per non mangiare troppa carne (sono tremende, una tira l'altra!), ma ora è tempo di polpette con la zucca! Ho postato già una ricetta di polpette con la zucca l'anno scorso, trovate qui la ricetta. Ho cambiato leggermente la ricetta e le cotte al forno. Qui ci sono ingredienti per 40 polpette, non le userete tutte (beh, in realtà potreste), mettetene quante volte, quelle che restano le potete mettere via in freezer (esattamente come ho fatto io!).

Ingredienti per 4 persone:

200 g pasta corta
50 g formaggio grattuggiato
noce moscata
olio evo

Per 40 polpette:
350 g carne macinata mista
100 g mortadella
200 g zucca già cotta al vapore
1 uovo
50-60 g pangrattato

Per la besciamella alla zucca:
50 g burro
50 g farina
200 g zucca già cotta al vapore
500 ml latte

Prepara le polpette: accendi il forno a 180°C, ricopri con carta da forno una teglia, metti tutti gli ingredienti nel robot da cucina, poi prepara le polpette e cuocile per 10 minuti, girale e cuoci per altri 5 minuti.

Lessa la pasta in acqua salata per un paio di minuti in meno rispetto a quanto scritto sulla confezione. Scola e versa la pasta in una grande ciotola, aggiungi qualche cucchiaio d'olio e mescola bene, per evitare che la pasta si incolli.

Prepara la besciamella: scalda il latte. Sciogli in una pentola il burro, aggiungi la farina e cuoci per alcuni minuti. Aggiungi la zucca e poi il latte, tutto in una volta. Continua a mescolare con una frusta e cuoci fino a quando si addensa (pochi minuti). Aggiungi sale e una grattuggiata di noce moscata.

Spennella d'olio una pirofila, versaci la pasta e disponi delle polpette sulla pasta, affondandole un po', cospargi con il formaggio grattuggiato. Cuoci al forno per 20 minuti per 180°C.

12 autumn cushions
12 cuscini per l'autunno

I confess: I have a passion for cushions. One day I'll stop limiting myself to buying new ones, one day I'll have a neutral sofa full of multi coloured cushions! (If you have the feeling that I would have never bought a red sofa, but I'm a renter and I have to stuck with it, you're correct!)

Browsing through a few sites, I found these, well some of them couldn't really fit the red sofa, but maybe ... a couple ...

Lo confesso: ho una passione per i cuscini. Un giorno non mi imporrò più di limitarmi a comprarne di nuovi, un giorno avrò un bel divano dalle tinte neutre pieno di cuscini multicolore! (Se avete la sensazione che non mi sarei mai comprata un divano rosso, ma sono in affitto e me lo devo tenere così, avete ragione!)

Scorrendo un po' di siti, ho trovato questi, beh alcuni proprio non starebbero bene sul divano rosso, però ... un paio ...

Happy Weekend!

What are your plans for the weekend? Here temperatures are going to drop, so it's about time to grab some sweaters and roast more pumpkins ... in the meantime, enjoy Lisbon's roofs!

Quali sono i vostri progetti per il weekend? Visto che qui le temperature scenderanno (si potrà già cominciare ad accendere il riscaldamento), sarà il caso di tirare fuori i maglioni e cucinare ancora zucche ... intanto godetevi i tetti di Lisbona!

Soft zucchini little cakes
Tortini morbidi alle zucchine


These cakes are eggless and have a soft texture: baking zucchini it's very important for this recipe, because you need to dry them ... believe me, zucchini can release a lot of water!
If you cover well your mould with breadcrumbs, you can unmould it easily, otherwise eat straight from it!

For 4 little cakes:
500 g zucchini
250 g ricotta
50 g grated parmesan
2 small tomatoes
breadcrumbs
evo oil

Turn oven on at 170°C.

Cut in half tomatoes lengthwise, sprinkle with salt and put them in a colander.

Brush with oil a baking tray.
Cut zucchini lengthwise, brush them with oil and sprinkle with salt.
Bake for 30 minutes. Let them cool a few minutes, then using a blender or a food processor, blend with ricotta and cheese.

Mix breadcrumbs with oil, until you have a moist mixture. Fill tomatoes with it.

Brush four ramequin with oil, sprinkle generously with breadcrumbs both bottom and sides, fill with zucchini mixture and put a tomato on top, sinking it a bit.

Bake at 170°C for 30 minutes, covered with foil, then take it off and continue for another 20 minutes.


Questi tortini sono senza uova ed hanno una consistenza soffice: cucinare al forno le zucchine è molto importante per questa ricetta, perchè abbiamo bisogno di asciugarle ... credetemi, in cottura le zucchine posso rilasciare molta acqua!
Se cospargete bene gli stampini di pangrattato, riuscite anche a sformarli, sennò mangiate direttamente dallo stampo!

Per 4 tortini:
500 g zucchine
250 g ricotta
50 g parmigiano grattuggiato
2 pomodori piccoli
pangrattato
olio evo

Accendete il forno a 170°C.

Tagliate a metà, in lunghezza, i pomodori, salateli e metteteli in un colino.

Spennellate d'olio una teglia.
Tagliate a metà, sempre in lunghezza, le zucchine, spennellatele d'olio e salatele.
Cuocetele per 30 minuti. Lasciatele raffreddare qualche minuto, poi con l'aiuto del robot da cucina o del miniper, frullatele con ricotta e formaggio.

Mescolate il pangrattato con l'olio, fino ad ottenere un composto umido. Riempite i pomodori.

Spennellate quattro ramequin con olio, distribuite generosamente pangrattato all'interno (sia sul fondo che sui bordi), riempite con il composto di zucchine ed adagiatevi sopra un pomodoro, affondandolo leggermente.

Cuocete a 170°C  per 30 minuti, coperti con la stagnola, poi eliminatela e procedete per altri 20 minuti.

I always tell myself I'd like to learn knitting, but I never seem to find the time to start it, maybe because once my sister started teaching me the basics but I always seemed to drop stiches (and I moved to cross stitching), so why do not begin without needles?

Mi dico sempre che vorrei imparare a fare la maglia, ma non trovo mai il tempo di cominciare, forse perchè una volta mia sorella aveva cominciato ad insegnarmi le basi (dritto, rovescio), ma facevo sempre cadere i punti (e quindi mi ero dedicata al punto croce) e allora perchè allora non cominciare senza ferri?

Ah, this title ... Do you love the home you have? I am a renter and for sure there are times when I don't, when I'd like to change this that - of course - I can't ... but maybe I should stop watching TV shows with amazing houses, and start making some improvement in my own!

Ah, questo titolo ... Voi amate la casa che avete? Io vivo in affitto e di sicuro ci sono delle volte che no, non mi piace, la vorrei diversa o vorrei poter cambiare alcune cose che, naturalmente, non posso cambiare ... ma forse dovrei smettere di vedere programmi TV con case fantastiche e cominciare a fare qualcosa per migliorare la casa in cui vivo!
